A couple people requested this recipe. It is easy and delicious and an excellent seasonal favorite for fall (though I make it year-round).
Bake a pumpkin (or any type of hard squash). I did my small pumpkin at 350 for 50 minutes with 2 T. milk and 1 T. butter inside of it.
Boil 2 cups rice in 4 cups water. Reduce heat to a simmer, cover, cook on low for 15 minutes.
In a large skillet cook approx. 1 lb. breakfast sausage (almost any sausage will do) along with a small chopped onion, 2 stalks of chopped celery. Stir into rice when finished. Salt to taste.
Serve rice mixture in or over pumpkin/squash. See? I told you it was easy.

I have a dinner in a pumpkin recipe where you make a beef stew, stick in your pumpkin and then bake it. It's so delicious!
